In 1922 Luisa Spagnoli created the guarded and secret Baci Perugina recipe. What do we know? Luisa added a precious cocoa filling with hazelnuts, on which she placed a whole hazelnut and finally she covered everything with her special chocolate, the Luisa® dark chocolate. The result was a small masterpiece with a rich taste and a shape resembling a hand’s knuckle, so she decided to call it Cazzotto (punch). With its simplicity, Luisa’s recipe was able to obtain a perfect balance between flavours and textures.
Only later did it take the name “Baci”. Everything in Baci Perugina chocolates is still unique today: the heart, is the exclusive recipe for Baci® Perugina® and the Luisa® dark chocolate that covers them is made with an inimitable technique which is carefully guarded. In the same way the perfectly imperfect form is respectful of Luisa Spagnoli’s craft tradition.
8 Super Special Ingredients
As noted in previous articles, the history of hazelnut spread and chocolates is well loved. It is claimed the Baci Perugina Original Dark is made with only 8 carefully selected ingredients. The hazelnuts, the protagonists of Baci, are selected by the hands of the Perugina experts, who roast them to perfection in order to acquire all their fragrance and crispness. Some are used for the grains that harmonise with luscious cocoa to enrich the heart of the truffle and others deserve a place honour on top of the chocolate. The Luisa® dark chocolate that covers the inner core is made in a traditional way, which gives it a superior finesse.
It is the result of the mixture of different types of cocoa, grown and harvested in a sustainable way, including the precious Arriba cocoa. The vanilla of Madagascar gives Baci Perugina’s scent those distinctive aromatic notes. The natural vanilla aromas enhance the taste of the original flavour of the ingredients.
Hazelnuts & Chocolate
Everything starts from the hazelnuts that are chosen and roasted to become the heart of Baci, transformed into grains to enrich the filling. On top of the heart, a crunchy hazelnut is delicately placed. None are placed in the same place as another and it is precisely for this reason that there are no two identical Baci Perugina chocolates! Finally, the hazlenuts are passed twice under a casting of Luisa® dark chocolate which creates a rich and enveloping layer and gives a harmony of flavour and consistency. The sustainable cocoa, the gluten-free certification and the Kosher certification makes Baci Perugina suitable for the needs of increasingly attentive consumers.
